Ingredients
  1. 1 ball pizza dough, homemade or store-bought
  2. 4 cups arugula
  3. 3 garlic cloves
  4. 1 inch piece fresh ginger, peeled and chopped
  5. 1 tablespoon green curry pasta
  6. 8 tablespoons coconut milk
  7. 1 teaspoon sugar
  8. 1 tablespoon olive oil
  9. 1/2 lb shrimp, peeled and deveined
  10. 1 red bell pepper, sliced thin
  11. 1 yellow bell pepper, sliced thin
  12. 1/2 lime, juice
  13. 1/4 cup fresh cilantro, chopped
Instructions
  1. Preheat the oven to 450 degrees and spray a pizza pan or large baking sheet with pam. On a lightly floured surface, roll the pizza dough out and transfer to the pizza pan. Add the arugula, garlic, ginger, curry paste, coconut milk and sugar to a food processor and pulse until smooth, 2 minutes. Wash and pat the shrimp dry, and sprinkle with salt and pepper. In a large pan over medium-high heat, heat the olive oil. Add the shrimp and cook until pink and opaque in the center, 2 minutes a side. Spread the arugula pesto evenly over the pizza dough. Arrange the shrimp and pepper slices on top and bake until crisp, 15-18 minutes. Top with chopped cilantro and a squeeze of lime juice. Cut into slices and serve!
