Ingredients
  1. 3/4 cup cooked black beans
  2. 1/2 cup vegetable oil
  3. 2 eggs
  4. 1/4 cup unsweetened cocoa powder
  5. 2/3 cup sugar
  6. 1 teaspoon expresso powder
  7. 1 teaspoon vanilla extract
  8. 1/2 cup chocolate chips
  9. 1/3 cup flour
  10. 1/2 teaspoon baking powder
  11. 1/2 teaspoon salt
  12. 1/4 cup confectioners sugar
Instructions
  1. Preheat the oven to 350 degrees and spray a 9X9 inch baking pan with pam. Add the beans, vegetable oil, eggs, cocoa powder, sugar, coffee, and vanilla to a blender and blend until smooth. Add 1/4 of the chocolate chips to a microwave safe bowl, and microwave in 30 second intervals, stirring in between, until smooth. Add to the blender and blend until smooth. In a large bowl, whisk together the flour, baking powder and salt. Add the wet mixture to the dry, mixing until combined. Add in the remaining 1/4 cup chocolate chips. Spread the mixture evenly into the pan and bake for 20 minutes. Let cool completely before cutting into squares, 15 minutes. Dust the brownies with confectioners sugar and dig in!
