Ingredients
  1. 1 pound chicken thighs, cut into 2 inch pieces
  2. 3 links andouille sausage, diced
  3. 1 large onion, chopped
  4. 2 celery stalks, chopped
  5. 1 green bell pepper, seeded and chopped
  6. 1 red bell pepper, seeded and chopped
  7. 1 teaspoon dried thyme
  8. 1 teaspoon dried oregano
  9. 1/2 teaspoon salt
  10. 2 bay leaves
  11. 1/2 teaspoon onion powder
  12. 1/2 teaspoon garlic powder
  13. 1/2 teaspoon mustard powder
  14. 1/4 teaspoon cayenne pepper
  15. 1/4 teaspoon ground black pepper
  16. 2 cups chicken broth
  17. 1 16 oz. can stewed tomatoes
  18. 3 cups cooked white rice
Instructions
  1. In a slow-cooker, combine all ingredients except the rice. Cover and cook on low for 6-8 hours or high for 3-4 hours. Serve in bowls over rice.
