Ingredients
  1. 1 large Butternut squash
  2. 1 tablespoon olive oil
  3. 1/4 cup plain Greek yogurt
  4. 1 tablespoon sesame seeds, toasted
  5. 1/4 cup golden raisins
  6. 1/4 fresh cilantro, chopped
  7. 3 scallions, chopped (green parts only)
  8. 1 lime, juice
Instructions
  1. Preheat oven to 425 degrees. Halve and seed the butternut squash; slicing until 1/2 inch thick. Spread in even layers on foil lined baking sheets. Drizzle with olive oil, salt and pepper, tossing to coat both sides. Bake until tender, 20 minutes, flipping halfway.
  2. Transfer to a serving bowl and top with Greek yogurt, sesame seeds, golden raisins, cilantro and scallions. Squeeze lime juice over top and serve.
