Ingredients
  1. 2 1/4 cups flour
  2. 1/2 cup rolled oats
  3. 1 1/2 teaspoons baking soda
  4. 1 teaspoon baking powder
  5. 1/2 teaspoon salt
  6. 1/4 teaspoon ground cinnamon
  7. 2 sticks butter, softened
  8. 3/4 cup light brown sugar
  9. 3/4 cup granulated sugar
  10. 2 teaspoons vanilla extract
  11. 2 eggs
  12. 2 cups semi-sweet chocolate chips
Frosting
  1. 2 tablespoons butter, softened
  2. 2 cups powdered sugar
  3. 1 tablespoon milk
  4. 1 teaspoon vanilla extract
  5. 1 teaspoon red food coloring
  6. 1 bag mini marshmallows
  7. 1/2 cup slivered almonds
Instructions
  1. Preheat the oven to 350 degrees and spray two baking sheets with pam. In a medium bowl, combine the oats, flour, baking soda, baking powder, salt, and cinnamon.
  2. In a large bowl, beat together the butter, brown sugar and sugar until fluffy, 3 minutes. Add vanilla and eggs.
  3. Add the dry ingredients to the wet ingredients, 1/2 at a time. Stir in chocolate chips.
  4. Using an ice cream scoop, scoop cookie dough onto baking sheets, 2 inches apart. Bake for 12-14 minutes until the edges are golden brown.
  5. While the cookies are baking, make the frosting by beating together all ingredients in a medium bowl.
  6. Once the cookies are cooled, cut each in half and spread a thick layer of frosting on the bottoms of half the cookies. Place 5-6 mini marshmallows on top of the frosting. Sandwich cookies (frosting half with non-frosting half) and place two slivered almonds in centers of each sandwich for teeth 🙂
