Ingredients
  1. 1 16 ounce package cheese tortellini
  2. 1 tablespoon butter
  3. 1 shallot, chopped
  4. 1 cup canned pumpkin
  5. 1/8 teaspoon nutmeg
  6. 1 1/4 cup heavy cream
  7. 1/4 cup Parmesan cheese, grated
  8. 1/2 cup fresh parsley, chopped
Instructions
  1. Bring a large pot of salted water to a boil. Add the tortellini and cook as label directs. Reserve 1/2 cup cooking water, then drain pasta. While the pasta is cooking, heat the butter in a skillet over medium heat. Add the shallot and cook until soft, 3 minutes. Add the pumpkin and nutmeg and continue cooking, 1 minute. Stir in the cream and bring to a boil. Reduce the heat to low and summer until thickened, 10 minutes. Stir in the cheese and season with salt. Add the cooked tortellini to the skillet, coating with the sauce. Serve in bowls and garnish with extra cheese and fresh parsley.
