Crust
  1. 1/2 pound butter
  2. 1/2 cup sugar
  3. 2 cups flour
  4. 1/8 teaspoon salt
Lemon layer
  1. 6 eggs
  2. 2 1/2 cups sugar
  3. 5 lemons, zest
  4. 1 cup lemon juice
  5. 1 cup flour
Instructions
  1. Preheat the oven to 350 degrees and spray a 9X13 square baking pan with pam. For the crust, cream the butter and sugar together in a large bowl with an electric mixer. Combine the flour and salt and add to butter. Dump the dough onto a floured board and gather into a ball. Press into the baking sheet and build up a 1/2 inch edge on all sides. Bake for 15 minutes or until lightly browned. Let cool. For the lemon layer, whisk together the eggs, sugar, lemon zest, lemon juice in a medium bowl. Add the flour, stirring to combine. Pour over the crust and bake for an additional 30-35 minutes minutes until the filling is set. Let cool completely before cutting. Dust with confectioners sugar and serve!
