Ingredients
  1. 1 stick butter, softened
  2. 1/4 cup sugar, plus 2 tablespoons
  3. 1/4 cup light brown sugar, packed
  4. 1 egg
  5. 1 teaspoon vanilla
  6. 1 1/2 cup flour
  7. 1/2 teaspoon baking powder
  8. 1/2 cup mini marshmallows
  9. 1 cup fresh strawberries, sliced thin
Instructions
  1. Preheat the oven to 350 degrees. Begin by sprinkling the strawberries with 2 tablespoons sugar and let them sit for 15 minutes or so. Meanwhile, in a small bowl whisk together the four and baking powder and set aside. In a large bowl, using an electric mixer, cream the butter, sugar, and brown sugar together until combined, 4 minutes. While mixing on slow, add your dry ingredients bit by bit until completely combined. Next using several paper towel, dry your strawberries to extract the moisture. Add the strawberries and marshmallows to the batter. Chill in the fridge for one hour so the dough is easier to handle (I skipped this step and the dough was too sticky). Scoop out heaping tablespoons of the dough, making sure to get strawberries in every cookie, and place on a heavily greased baking sheet. Bake for 12-15 minutes or until browned on the bottom.
