Ingredients
  1. 2 1/2 cups flour
  2. 1/2 cup unsweetened cocoa
  3. 1 teaspoon baking soda
  4. 1/2 teaspoon salt
  5. 1 cup sugar
  6. 3/4 cup packed brown sugar
  7. 1 cup butter, softened
  8. 1/2 cup Nutella
  9. 2 eggs
  10. 2 teaspoons vanilla
  11. 24 caramels unwrapped and frozen
  12. 1/3 sugar for rolling, optional
Instructions
  1. Preheat oven to 375 degrees. In a medium bowl, combine flour, cocoa, and baking soda. In a large mixing bowl, beat together the sugar, brown sugar, and butter until fluffy. Add Nutella, eggs until combined. Next add dry ingredients, bit by bit, and mix until combined. Cover bowl with plastic wrap and chill for one hour (makes dough much easier to work with). Shape a tablespoon of dough into a ball, press a frozen unwrapped carmel in the center and reshape into a ball. Roll in sugar and place on baking sheet lined with parchment paper (important so carmel doesn't stick to the bottom) about 2 inches apart. Bake 10-12 minutes or until slightly cracked. Let cool completely before transferring to a serving plate.
Notes
  1. The trick to these is making sure there is enough dough on the bottom so the caramel doesn't ooze out the bottom.
