Ingredients
  1. 4 slices bacon, cut into 1 inch pieces
  2. 1 large onion, diced fine
  3. 2 garlic cloves, minced
  4. 1 tablespoon fresh ginger, minced
  5. 2 tablespoons tomato paste
  6. 1 12-oz bottle root beer
  7. 2 teaspoons apple cider vinegar
  8. 2 teaspoons molasses
  9. 1 tablespoon grainy mustard
  10. pinch of red pepper flakes
  11. 1/4 teaspoon curry powder
  12. 2 14-oz cans cannellini beans, rinsed and drained
Instructions
  1. Preheat the oven to 400 degrees. Heat a medium oven-safe pot over medium heat and add the bacon. Cook until crisp, 7 minutes. Remove from pot and place on plate. Add the onions, garlic, and ginger to the pot and cook until golden and soft, 5 minutes. Add the tomato paste and cook until deep red in color, 2 minutes. Add the root beer, cider vinegar, molasses, mustard, red pepper flakes, and curry powder, beans, and bacon and stir until combined. Season with salt and pepper and pop in oven, uncovered. You can also transfer mixture to a separate oven-safe pot if you wish. Bake for 1 hour or until the mixture is thick. Spoon into bowls and garnish with extra cooked bacon if you wish.
