Ingredients
  1. 3 pounds chicken drumsticks
  2. 1 1/2 quarts coconut milk
  3. 1/2 teaspoon salt
  4. 6 limes, juice
  5. 3 diced thai chiles, chopped fine
  6. 1 tablespoon fish sauce
  7. chopped peanuts for garnish
Instructions
  1. Season the drumsticks with salt and place in a dish with the coconut milk. Allow to marinate for at least 4 hours. Preheat oven to 400 degrees and place wings on baking sheet, shaking off excess milk. Bake for 45 minutes or until cooked through and browned. In a bowl, mix together the lime juice, chilies (you can also use jalapenos), and fish sauce. Toss cooked wings in bowl and serve on plate, topping with remaining juices and chopped peanuts. Serve with bottled peanut sauce if you so desire!
