Ingredients
  1. 1 cup flour
  2. 1/3 cup unsweetened cocoa powder
  3. 1/2 teaspoon baking soda
  4. 1/8 teaspoon salt
  5. 1 stick butter, room temperature, cut into 1/2 inch pieces
  6. 3/4 cup peanut butter, creamy
  7. 3/4 cup sugar, plus 1/4 cup
  8. 1/2 cup light brown sugar
  9. 1 egg
  10. 1 teaspoon vanilla extract
  11. 1/4 cup jam, blackberry jam
Instructions
  1. Preheat oven to 375 degrees. Grease 2 baking sheets with pam and set aside. In a medium bowl, mix together flour, cocoa powder, baking soda and salt. In a mixer, beat together the butter, peanut butter, 3/4 cup sugar, and light brown sugar until smooth. Add in the egg and vanilla. Gradually add in the flour mixture until fully incorporated. Put the remaining 1/4 sugar in a small bowl. Form the dough until 1/4 cup size balls and roll in the sugar. Arrange 5 balls of dough evenly apart, on each baking sheet. Using a 1/4 teaspoon measure, make a hole in the center about 1/2 inch deep. Spoon 1 teaspoon of jam into each hole. Bake for 12-14 minutes or until the surface of the cookies are crackled. Make sure to let the cookies cool completely before removing from baking sheet, or they will fall apart.
