Ingredients
  1. 4 boneless skinless chicken breasts
  2. 2 tablespoons olive oil
  3. 2 cups lightly packed baby spinach leaves
  4. 1/4 cup pine nuts, toasted
  5. 1 lemon, juice and zest
  6. 1/3 cup grated Parmesan
  7. 1/3 cup olive oil
  8. salt and pepper
Chicken
  1. Sprinkle the chicken with salt and pepper. Heat 2 tablespoons olive oil in a large pan over medium heat. Add the chicken and grill until brown and cooked through, about 7 minutes per side.
Pesto
  1. Combine the spinach, toasted pine nuts, lemon juice and zest, and parmesan in a food processor. With the machine running, gradually add the 1/3 cup olive oil, blending until smooth. Add salt and pepper to taste. Spread pesto over each piece of grilled chicken and serve!
