Ingredients
  1. 1 lb pork sausage
  2. 4 tablespoons butter
  3. 2 leeks, just the white bulbs, cleaned and sliced thin
  4. 2 apples, cored and chopped
  5. 1 cup celery, chopped
  6. 1 tablespoon poultry seasoning
  7. 1 cup dried cranberries
  8. 1 tablespoon fresh sage, chopped
  9. 2 teaspoons fresh rosemary, chopped
  10. 6 cups boxed bread cubes
  11. 2-3 cups chicken stock
  12. 1 teaspoon salt
  13. 2 teaspoons pepper
Instructions
  1. Preheat oven to 375 degrees and spray a 9X13 dish with pam. In a small bowl, place the cranberries in a cup of boiling water and let sit for 15 minutes. In a large skillet, cook the sausage until browned, 10 minutes. Transfer the sausage to a very large bowl. In the same skillet, melt the butter over medium heat. Add the leeks, apples, celery and poultry seasoning and saute until soft, 10 minutes. Mix in the drained cranberries, sage, and rosemary. Add the mixture to the large bowl with sausage. Next add the bread cubes and chicken stock, little by little until the stuffing is very moist. Stuffing shouldn't be mushy. Transfer to baking dish and bake, uncovered, for 25 minutes or until the top is crispy.
