Ingredients
  1. 1 ball pizza dough, homemade or store-bought
  2. 2 boneless skinless chicken breasts
  3. 1/2 cup plus 2 tablespoons BBQ sauce
  4. 1 cup smoked gouda, grated (about 4 ounces)
  5. 1 cup mozzarella cheese, grated (about 4 ounces)
  6. 1/2 red onion, sliced
  7. 1 teaspoon extra olive oil
  8. 1/2 cup cilantro, chopped
Instructions
  1. Preheat oven to 450 degrees and spray a pizza pan or large baking sheet with pam. Rinse chicken, season with salt and pepper. Brush chicken with 2 tablespoons bbq sauce and olive oil. Place chicken in baking dish and bake until cooked through, 20 minutes. Once done, cut chicken into cubes. Meanwhile roll out pizza dough onto a baking sheet. On a lightly floured surface, roll out dough and transfer to pan. Brush dough with 1/2 cup bbq sauce, and top with cooked chicken, cheeses, and red onion. Bake for 10-15 minutes or until crust is lightly browned and cheese is melted. Top with cilantro once out of the oven and serve 🙂
