Ingredients
  1. 12 ounces tofu
  2. 1 tablespoon taco seasoning
  3. 1 package coleslaw mix (around 4 cups)
  4. 1/2 red onion, chopped
  5. 2 tablespoons olive oil
  6. 3 limes
  7. 1 cup lowfat sour cream
  8. 1 cup shredded mozzerella cheese
  9. 1/2 cup salsa verde
  10. 8 tortillas
Instructions
  1. Lay the block of tofu on a stack of paper towels and top with more paper towels. Put a heavy skillet on top to press out the excess water, about 10 minutes. Meanwhile, toss the coleslaw, 1 tablespoon olive oil, cilantro, red onion, and the zest and juice of one lime. In a small bowl mix the juice of one lime with the sour cream and season with salt and pepper. Once the tofu is drained, cut into strips. Sprinkle 1 tablespoon of taco seasoning all over. Heat 1 tablespoon of olive oil in a large skillet and saute tofu, cooking until it browns on all sides, about 10 minutes. Toast tortillas over a medium skillet for a minute until warm and slightly browned. Top tortillas with tofu, cheese, coleslaw, sour cream mixture, and salsa. Serve with lime wedges.
