Lemon, Asparagus, Goat Cheese Pasta

Ingredients
  1. 1 pound pasta (spiral shaped)
  2. 1 pound asparagus, cut into 1 inch pieces
  3. 1/4 cup olive oil
  4. 2 lemons (zest and juice)
  5. 1 5-ounce log goat cheese
Instructions
  1. Bring a large pot of salted water to a boil and cook the pasta until al dente (three minutes less than cook time on package). Add asparagus and cook until tender (3 minutes). Drain pasta and asparagus together, and reserve 1 cup of pasta water. While pasta is cooking, combine olive oil, lemon juice, lemon zest, and cheese in a large bowl. Add hot pasta and asparagus to the bowl, and stir until pasta is fully coated. Season generously with salt and pepper. Add some reserved pasta water if sauce needs to be loosened.
