Ingredients
  1. 1/2 cup peanut butter
  2. 1/4 cup water
  3. 1 tablespoon butter, melted
  4. 2 cloves garlic, minced
  5. 1 can chipotle chilies
  6. 1/2 teaspoon salt
  7. 1 lb. boneless, skinless chicken breasts
  8. 1 lime
  9. Whole wheat tortillas, 10
  10. 1 medium red cabbage, chopped
  11. 1 cup fresh cilantro, chopped
Instructions
  1. Preheat the oven to 400 degrees and spray a 2 qt. baking dish with pam. In a food processor, blend the peanut butter, water, butter, garlic, 1 chipotle pepper, 1 tablespoon of chipotle pepper sauce and salt. Pour into a baking dish and add the chicken, turning to coat. Bake for 30 minutes. Slice the chicken and drizzle with the juice of 1/2 lime. To a small bowl, add remaining lime juice, cabbage and 3/4 cup fresh cilantro. Top tortillas with chicken, sauce, cabbage and a sprinkling of cilantro.
