Ingredients
  1. 3 tablespoons butter
  2. 1 shallot, sliced
  3. 1 garlic clove, minced
  4. 2 tablespoons flour
  5. 1 1/4 cups half-and-half
  6. 1 10 oz. block white cheddar cheese, shredded
  7. 1/2 teaspoon salt
  8. 1/4 teaspoon pepper
  9. 1/8 teaspoon nutmeg
  10. 2 lbs .potatoes, peeled and thinly sliced
  11. 1 medium fennel bulb, thinly sliced
  12. 1 tablespoon fresh rosemary, chopped
Instructions
  1. Preheat the oven to 400 degrees and spray a 9X13 baking dish with pam. In a large pan over medium-heat, melt the butter. Add the shallot and cook, 2-3 minutes. Add garlic and cook, 1 minute. Whisk in flour and cook, 1 minute. Add half-and-half and cook until thick, 5 minutes. Whisk in cheese and cook until smooth, 3 minutes. Add in salt, pepper and nutmeg. Layer half potatoes in pan. Top with fennel slices and a second layer of potatoes. Pour cheese sauce over top, cover with foil and bake until tender, 50 minutes. Increase oven to broil and broil uncovered until browned, 2-4 minutes. Garnish with rosemary and serve.
