Ingredients
  1. 2 cups purple seedless grapes, halved
  2. 1 cup chicken broth
  3. 1/4 cup port
  4. 1 teaspoon Dijon mustard
  5. 4 chicken cutlets or breasts
  6. 2 tablespoons canola oil
  7. 2 teaspoons fresh thyme, chopped
Instructions
  1. In a large pan, boil the first four ingredients together until thick, 15 minutes. Puree half, then return to the pan. While the sauce is thickening, heat the oil in a large pan over medium-high heat. Season the chicken with salt and pepper and add to the pan, cooking until browned and cooked through, 7 minutes a side. Add the grape sauce to the skillet along with the thyme. Serve with crusty bread for dipping or on top of rice.
