Ingredients
  1. 4 plum tomatoes, quartered
  2. 2 shallots, chopped
  3. 1 2-inch piece ginger, peeled
  4. 1 jalapeño pepper, seeded and chopped
  5. 1 teaspoon curry powdered
  6. 3 tablespoons olive oil
  7. 2-15 oz. cans chickpeas, drained and rinsed
  8. 2 cooked chicken breasts, shredded
  9. 2 cups frozen okra
  10. 1/2 cup cilantro, chopped
  11. Naan bread for serving
Instructions
  1. Add the plum tomatoes, shallots, ginger, jalapeño, curry powder and 1 teaspoon salt to a food processor and pulse until smooth. Heat the olive oil in a large pot over medium-high heat. Add the tomato mixture and cook until thick, 10 minutes. Add in 1 cup water and bring to a simmer. Add in the chickpeas, chicken breasts, frozen okra and cilantro and cook until okra is tender, 5 minutes. Serve in large bowls with warmed naan bread.
