Ingredients
  1. 7 strips bacon
  2. 4 cups prepared pancake batter
  3. 8 oz. mascarpone cheese
  4. 1 1/2 cups powdered sugar
  5. 2 tablespoons maple syrup
Instructions
  1. Preheat the oven to 350 degrees and spray a muffin tin with pam. Cook the bacon in a large pan until crispy, 6 minutes. Reserve 1 tablespoon of the bacon drippings. Prepare the pancake batter according to the package instructions. Chop 4 of the bacon strips until fine and add to the batter. Pour the batter into the muffin tins so they are 3/4 full and bake for 12 minutes, or until a knife inserted in the center comes out clean. While they are baking, begin making the frosting. In a medium bowl, combine the mascarpone, powdered sugar, maple syrup and reserved bacon drippings. Place in fridge until the cupcakes are completed cooled and ready to be frosted. Top each cupcake with a generous heaping of frosting. Cut the remaining 3 strips of bacon into 1 inch pieces and top each cupcake with a piece.
