Ingredients
  1. 1 lb Brussels sprouts
  2. 1 cup toasted pecans, chopped
  3. 4 oz. crumbled blue cheese
  4. 1 apple, sliced
  5. 6 tablespoons olive oil
  6. 2 tablespoons apple cider vinegar
  7. 2 teaspoons Dijon mustard
Instructions
  1. Wash the Brussels sprouts and pat dry. Thinly slice and transfer to a large bowl, using your fingers to separate the leaves. In a small pan, toast the pecans over medium heat until slightly browned, 7 minutes. Add to the bowl along with the apple, and blue cheese. In a medium bowl, whisk together the olive oil, vinegar and Dijon mustard and season with salt and pepper. Add to the bowl, tossing to coat everything.
