Bread
  1. 1/2 stick butter, softened
  2. 1/2 cup brown sugar
  3. 1 cup flour
  4. 1/2 teaspoon salt
  5. 1 teaspoon baking powder
  6. 1/4 teaspoon baking soda
  7. 1/4 teaspoon cinnamon
  8. pinch of nutmeg
  9. 1 egg
  10. 1/2 cup vanilla yogurt
  11. 1/2 cup pecans, chopped
  12. 1/2 teaspoon vanilla extract
Filling
  1. 3 medium apples, peeled, cored & diced into small bits
  2. 1/4 cup brown sugar
  3. 1/2 teaspoon cinnamon
  4. pinch of nutmeg
  5. 1/2 lemon, juice
Crumble
  1. 1/4 cup flour
  2. 1/4 cup brown sugar
  3. 1/4 cup oatmeal
  4. 3 tablespoons butter, cubed
  5. 1 teaspoon cinnamon
Instructions
  1. Preheat oven to 350 degrees and spray a bread pan liberally with pam. Begin by peeling, coring, and dicing the apples. Place in a bowl with lemon juice of half a lemon. Add the rest of the "filling" ingredients to the bowl and toss to combine, set aside. In a large bowl, cream together the butter and sugar until fluffy, 3 minutes. Add in the egg, vanilla, and yogurt. In a separate bowl, whisk together the flour, salt, baking powder, baking soda, cinnamon, and pinch of nutmeg. In three separate batches, add the dry ingredients to the wet, mixing after each to combine. Fold in the pecans, along with the "filling". Pour batter into bread pan. In a separate bowl, combine the "crumble" ingredients with your fingers until the butter resembles small peas. Top bread with crumble and bake for 45 minutes or until tester comes out clean. Let cool completely before removing bread from pan, at least 10 minutes.
Notes
  1. I would recommend waiting another 30 minutes or so before slicing bread, so it doesn't fall apart. I also found the smaller the apple bits, the more the bread stays in-tact when slicing.
