Fish
  1. 1 1/2 lb tilapia fillets
  2. 1 tablespoon olive oil
  3. 1 lime, juice
  4. 2 teaspoons honey
  5. 2 garlic cloves, minced
  6. 1 tablespoon chili powder
  7. 1 teaspoon cumin
  8. 1/4 teaspoon cayenne pepper
Slaw
  1. 2 cups coleslaw mix
  2. 2 tablespoons fresh cilantro, chopped
  3. 1/4 cup low fat sour cream
  4. 1 lime, juice
  5. 1 avocado, diced
  6. 1 mango, diced
  7. 8 flour tortillas
  8. extra cilantro and lime wedges for garnish
Instructions
  1. In a large zip-lock bag, add the tilapia along with the rest of the marinade ingredients. Close the bag and massage the seasonings into the fish. Place in fridge to marinate, 20 minutes.
  2. Meanwhile, in a large bowl, add the slaw ingredients, tossing to coat. In a large pan over medium-high heat, heat the olive oil. Cook the fish until browned, 4 minutes a side. (You can also cook your fish on the grill if you would prefer). Microwave the tortillas on a plate until warm, 45 seconds. To make your tacos: add to the tortillas a bit of each: tilapia, slaw, mango, avocado. Garnish with extra cilantro or a squeeze of lime if you wish!
