Ingredients
  1. 1 ball pizza dough, homemade or store-bought
  2. 2 boneless, skinless chicken breasts
  3. 4 tablespoons Thai sweet chili sauce
  4. 12 ounces mozzarella, thinly sliced
  5. 1 cups smooth peanut butter
  6. 1/3 cup warm water
  7. 3 teaspoons sesame oil
  8. 1/4 cup soy sauce
  9. 2 tablespoons fresh ginger, minced
  10. 2 garlic cloves, peeled
  11. 1 cup shredded carrots
  12. 1 cup cilantro leaves, chopped
  13. 1 tablespoon olive oil
Instructions
  1. Preheat the oven to 450 degrees and spray a pizza pan or large baking sheet with pam. First make the peanut sauce. Add peanut butter, sesame oil, soy sauce, garlic, and ginger to a food processor and blend. Add water as you blend, and add more if it needed (sauce should be relatively thin). Next slice each chicken breast in half lengthwise and season with salt and pepper. Heat a large skillet with olive oil and cook chicken until browned on both sides, 5 minutes a side. As chicken is cooking, roll out pizza dough on a lightly floured surface and transfer to pan. Cover with Thai chili sauce and mozzarella slices. Slice cooked chicken thin and layer on top of cheese. Bake for 10-12 minutes or until golden. Take pizza out of oven and top with shredded carrots, and cilantro. With a grilling brush or fork drizzle the peanut sauce all over top. Cut into slices and serve!
Notes
  1. If your my Dad, spoon some extra sauce on the side for some delicious pizza dunking.
