Ingredients
  1. 2 1/2 lbs sweet potatoes (about 4 large)
  2. 2 eggs
  3. 3 tablespoons butter, melted
  4. 2 tablespoons dark brown sugar
  5. 1 teaspoon salt
  6. 1/2 teaspoon cinnamon
  7. 1/2 teaspoon ginger
  8. 1/8 teaspoon nutmeg
  9. 1/2 cup pecans, chopped
Instructions
  1. Preheat the oven to 400 degrees and spray a baking sheet with foil. Put the sweet potatoes on the sheet and pierce with a fork all over. Bake for 45 minutes or until tender. Turn the oven down to 350 degrees. Scoop the potatoes out of their skins and add to a medium bowl. Mash until smooth. Add in the eggs, butter brown sugar, salt, cinnamon, ginger, nutmeg and a dash of pepper, whisking until smooth. Spray an 8X8 inch baking dish with pam and add sweet potatoes and sprinkle with pecans. Bake 30 minutes.
