Ingredients
  1. 1 large sweet potato
  2. 1 lb whole wheat pasta
  3. 2 tablespoons butter
  4. 2 tablespoons flour
  5. 2 garlic cloves, minced
  6. 1 1/2 cups whole milk
  7. 3/4 cup mozzarella cheese, shredded
  8. 3/4 asiago cheese, shredded
  9. 3/4 cup parmesan cheese, shredded
  10. 1 large bunch spinach, about 3 large handfuls
Instructions
  1. Bring a large pot of water to a boil and preheat the oven to 400 degrees. Peel and cube the sweet potato. Cook until tender, 10-12 minutes. Drain and let cool. Place the sweet potato in a food processor with 1/4 cup milk. Pulse until completely smooth, 2 minutes. Bring another large pot of water to a boil and cook the pasta until al dente, 6 minutes. Drain and set aside. In a medium bowl combine the mozzarella, asiago, and parmesan cheeses. In a large pan over medium heat, melt the butter and add the garlic, cooking for 1 minute. Whisk in the flour and cook until lightly brown, 2 minutes. Add in 1 1/4 cup milk and cook until thick, 3 minutes. Whisk in the sweet potato puree and cook until hot, 2 minutes. Add in all the cheeses, reserving 1/2 cup for the topping. Spray a large baking dish with pam and add to it the pasta, spinach, and cheese sauce. Stir until the spinach is slightly wilted and all the ingredients are incorporated. Sprinkle the remaining 1/2 cup cheese on top and bake for 30-35 minutes or until the cheese is slightly browned. Scoop into bowls and enjoy!
