Ingredients
  1. 2 cups whole-wheat flour
  2. 2 teaspoons baking powder
  3. 1/2 teaspoon salt
  4. 1/4 cup butter, softened
  5. 1/4 cup sugar
  6. 2 bananas, extremely ripe
  7. 1 egg
  8. 1/2 cup plain Greek yogurt
  9. 2 teaspoons vanilla extract
  10. 1 teaspoon cinnamon
  11. 1 cup strawberries, diced
Instructions
  1. Preheat the oven to 350 degrees and spray a bread pan with pam. In a small bowl, combine the flour, baking powder, cinnamon and salt together. In a medium bowl, mash the bananas using a fork. In a large bowl, cream together the butter and sugar until soft. Add in the bananas, egg, yogurt and vanilla, beating to combine. Add in the dry ingredients, 1/2 at a time, until combined. In a small bowl, toss the strawberries with 1 tablespoon of flour (this prevents them from sinking to the bottom of the bread when it bakes). Fold in the strawberries and pour the batter into the bread pan. Sprinkle a bit more cinnamon and sugar on top and bake until a knife inserted in the center comes out clean, 65-70 minutes. Allow to cool completely before removing from the pan. Slice and serve.
