Ingredients
  1. 1 lb chicken sausage, casings removed *you can also use turkey or italian sausage
  2. 1 tablespoon olive oil
  3. 2 garlic cloves, minced
  4. 1/4 teaspoon red pepper flakes
  5. 4 cups chicken broth
  6. 1 15 oz can cannellini beans, drained and rinsed
  7. 1 teaspoon dried oregano
  8. 1 bay leaf
  9. 1 lemon, juice
  10. 1 large bunch spinach, coarsely chopped
  11. 1/4 cup parmesan cheese
Instructions
  1. In a large pan over medium-high heat, cook the sausage until browned, 8 minutes. Transfer to a plate. Add the olive oil, garlic and red pepper flakes to the pan and cook, 1 minute. Add the chicken broth, sausage, beans, oregano, bay leaf, and lemon juice. Bring to a boil and reduce, simmering for 15 minutes. Add the spinach and cook until it wilts, 3 minutes. Season with salt, pepper. Remove bay leaf and spoon into bowls, topping with parmesan cheese and more lemon juice if you wish!
