Ingredients
  1. 4 oz semi-sweet chocolate
  2. 1 box store-bought cannoli shells
  3. 2 cups ricotta cheese
  4. 1/4 cup confectioners sugar
  5. 1/4 teaspoon salt
  6. 1/4 cup caramel
Instructions
  1. In a microwave safe bowl, microwave the chocolate in 30 second intervals, stirring in between, until melted. Dip each end of the cannoli shells in the chocolate, and transfer to a foil lined baking sheet. Place in the refrigerator until hardened, 30 minutes. Meanwhile, make the cannoli filling. In a medium bowl, mix together the ricotta cheese, confectioners sugar, salt and caramel. Transfer to a large ziplock bag and cut the end off with scissors. Squeeze the filling into both ends of the shells and place back in the refrigerator until ready to serve!
