Ingredients
  1. 1 1/2 cups flour
  2. 1 cup oatmeal
  3. 1 1/2 teaspoon baking powder
  4. 1/2 teaspoon baking soda
  5. 1 teaspoon cinnamon
  6. 1/4 teaspoon salt
  7. 1/3 cup dark brown sugar, packed
  8. 2 egg whites, beaten
  9. 2/3 cup almond milk
  10. 1 cup canned pumpkin puree
  11. 1/3 cup apple butter, or applesauce
  12. 1/2 cup white chocolate chips
Instructions
  1. Preheat oven to 350 degrees and line a muffin tin with 12 muffin cups and spray with pam. In a large bowl, mix the flour, oatmeal, baking powder, baking soda, cinnamon, and salt together. In a separate bowl, combine the sugar, egg whites, almond milk, pumpkin, and apple butter. Add the wet mixture to the dry ingredients, stirring until throughly combined. Add in the chocolate chips. Fill each cup 3/4 full with batter and sprinkle a teaspoon of oameal on the top of each. Bake for 25 minutes or until a toothpick inserted in the center comes out clean. Best served warm, reheat in the microwave if you need to!

  1. I recommend slathering some apple butter on these!
