Plum Lemon Upside Down Cake

 Ingredients
 - 1 3/4 cups sugar
 - 4 plums, cut into 1/2-inch wedges
 - 1 3/4 cups flour
 - 1 teaspoon baking powder
 - 1/2 teaspoon baking soda
 - 1/2 teaspoon salt
 - 1 stick butter, room temperature
 - 2 eggs
 - 1 teaspoon vanilla extract
 - 3/4 cup milk
 - 1/4 cup sour cream
 - 1 lemon, zest
 
Instructions
 - Preheat the oven to 375 degrees and spray a 10 inch round baking pan with pam. Arrange the plums in circles to evenly cover the bottom of the pan. In a large skillet over medium heat, combine 3/4 cup sugar and 1 1/2 tablespoons water. Cook until amber in color, 10 minutes. Pour over the plums. In a medium bowl whisk the flour, baking powder, baking soda and salt. In a large bowl, beat the butter and remaining 1 cup sugar until fluffy, 5 minutes. Add in the eggs, one at a time. Beat in the vanilla. In a separate small bowl, combine the milk, sour cream and lemon zest. Add the flour mixture to the butter mixture, 1/2 at a time. Beat in the milk mixture, 1/2 at a time. Pour the batter over the plums and spread evenly. Bake for 50 minutes or until a knife inserted in the center comes out clean. Let sit for 10-15 minutes before inverting onto a platter, tapping the top of the pan to make it easier to release.
