Ingredients
  1. 1 lb macaroni
  2. 4 cups sharp cheddar cheese, shredded
  3. 34 cup mayonnaise
  4. 1 8 oz jar pimentos, drained and chopped
  5. 4 scallions, chopped, whites and greens
  6. 1/2 teaspoon cayenne pepper
Instructions
  1. Cook the macaroni in boiling water according to the package instructions. In a small pan sprayed with cooking spray, cook the white parts of the scallions until soft, 3 minutes. Add to a large bowl along with the remaining ingredients, tossing to combine. Drain the macaroni and add to the bowl when still warm, stirring to coat until smooth. The heat from the pasta should melt the cheese and form a thick sauce. Season with salt and serve warm or cold.
