Ingredients
  1. 12 ounces orecchiette pasta
  2. 4 chicken sausages, chopped
  3. 1 bunch scallions, thinly chopped
  4. 2 cloves garlic
  5. 8 ounces button mushrooms, sliced
  6. 2 cups cherry tomatoes, halved
  7. 1/2 cup chicken broth
  8. 1/2 cup shaved parmesan cheese
Instructions
  1. Bring a pot of salted water to a boil. Add the pasta and cook according to the label. Reserve 1 cup cooking water and drain. Meanwhile heat the sausage in a large skillet until it begins to brown, 3 minutes. Add the scallions, garlic, mushrooms, 1/2 teaspoon salt, 1/2 teaspoon pepper and cook until mushrooms start to brown, 5 minutes. Finally add the cherry tomatoes and cook until softened, 3 minutes. Add the broth, pasta, and cheese and combine until coated. Add some of the reserved water if needed to loosen. Season with more salt and pepper. Divide among bowls and garnish with more cheese and scallions.
