Ingredients
  1. 1 cup uncooked instant couscous
  2. 1 cup orange juice
  3. 1/4 cup olive oil
  4. 1/3 cup golden raisins
  5. 1/3 cup almonds, chopped
  6. 1/3 cup parsley, chopped
  7. 1 teaspoon coriander
Instructions
  1. In a small pot, bring the orange juice and raisins to a boil. In a small bowl, combine the olive oil, couscous, salt and pepper. Add the couscous to the pot, turn off the heat, and cover for 5 minutes. Fluff couscous with a fork, and add almonds, parsley, and coriander. Check to see if more olive oil, salt, or pepper is needed. Serve warm or cold.
