Ingredients
  1. 4 large boneless, skinless chicken breasts
  2. 4 thin slices ham, or prosciutto
  3. 4 slices swiss cheese, or gruyere
  4. 1/4 cup flour
  5. 1 cup Panko bread crumbs
  6. 4 sprigs fresh thyme, leaves only
  7. 1 garlic clove, minced
  8. 2 tablespoons butter, melted
  9. 2 eggs
Instructions
  1. Preheat oven to 350 degrees. Lay the chicken breasts between 2 pieces of plastic wrap and using a meat mallet, pound to 1/4 inch thick. Remove top sheet and lay 1 slice ham and 1 slice cheese over the top of the chicken. Tuck in the sides and roll up chicken like a jellyroll inside the plastic wrap. Twist both ends to seal and form a log. Repeat with other 3 chicken breasts.
  2. In a large plate, season the flour with salt and pepper. On a separate large plate, combine the bread crumbs with thyme, garlic, salt, pepper, and melted butter. On a separate large plate, beat the eggs together and season with salt and pepper. Remove the chicken from the plastic wrap. First, dust in the flour, then dip in the egg mixture, and coat in the bread crumbs. Spray a baking pan with pam and transfer the chicken breasts onto it. Bake for 30-40 minutes or until browned and cooked through. Serve whole or cut into pinwheels.
