Ingredients
  1. 2 1/4 cups flour
  2. 1/2 cup cocoa powder
  3. 2 teaspoons creme of tartar
  4. 1 teaspoon baking soda
  5. 1/2 teaspoons coarse salt
  6. 2 sticks butter, softened
  7. 1 3/4 cups sugar
  8. 2 eggs
  9. 2 teaspoons cinnamon
  10. 1/2 teaspoon chile powder
Instructions
  1. Preheat oven to 400 degrees and line two baking sheets with foil + spray with pam. In a medium bowl, combine the flour, cocoa powder, cream of tartar, baking soda and salt. In a large bowl, beat the butter and 1 1/2 cups sugar on medium speed until fluffy, 2 minutes. Add the eggs and beat to combine. With the mixer running add the dry ingredients to the wet, 1/2 at time until combined. In a small bowl combine the remaining 1/4 cup sugar, cinnamon and chile powder. Using heaping tablespoons, form balls of dough and roll in cinnamon-sugar mixture. Place three inches apart on the baking sheets and bake for 10 minutes. Let cool completely before removing from baking sheets, 10 minutes.
