Crust
  1. 1 package graham crackers
  2. 3 tablespoons light brown sugar
  3. 1/2 stick butter, melted and cooled
Filling
  1. 2 oz cream cheese, softened
  2. 1 lime, zest
  3. 1 14 oz. can sweetened condensed milk
  4. 1 egg yolk
  5. 1/2 cup Key lime juice
Garnish
  1. 3/4 cup shredded coconut, toasted
Instructions
  1. Preheat the oven to 325 degrees. Line a 8X8 square baking pan with foil and spray with pam. First make the crust. Pulse graham crackers in a food processor until finely ground, 2 minutes. Add the brown sugar and salt, pulsing a few more times. Drizzle in the melted butter and pulse until moistened, 1 minute. Dump the crumbs into the pan and press into an even layer with your hands. Bake until lightly golden brown, 18-20 minutes. Meanwhile, make the filling. In a medium bowl, stir together the cream cheese, lime zest and a pinch of salt. Add the sweetened condensed milk, egg yolk and lime juice and whisk until no lumps remain. Pour the filling over the crust and bake until set, 15-20 minutes. Cool to room temperature, cover with foil and refrigerate until chilled, at least 2 hours or overnight. When ready to cut, run a sharp knife until warm water and cut along the edges of the pan. Lift the bars from the pan and cut into 16 squares, sprinkling each with a teaspoon or so of toasted coconut. Store in refrigerator.
