Ingredients
  1. 8 chicken thighs
  2. 3 tablespoons olive oil
  3. 1/4 teaspoon salt
  4. 1/4 teaspoon pepper
  5. 1/4 teaspoon fresh thyme, chopped
  6. 1/4 teaspoon fresh rosemary, chopped
  7. 1 large onion, chopped
  8. 3 tablespoons honey
  9. 1 12 oz can amber ale
  10. 2 tablespoons butter
  11. 1 tablespoon fresh parsley chopped
Instructions
  1. Clean the chicken thighs and pay dry. Sprinkle with salt and pepper. Heat the olive oil in a large pan over medium-high heat and add the chicken thighs, cooking until brown, 7 minutes a side. Sprinkle with thyme and rosemary. Transfer chicken to a plate. Add the onion to the pan and cook until soft and slightly caramelized, 15 minutes. In a medium bowl, combine the honey and beer. Pour into the pan and simmer over medium heat until reduced by half, 10 minutes. Add the chicken thighs back to the pan along with the butter, and simmer until cooked all the way through, 10 minutes. Serve on a plate, spooning extra sauce over the chicken. Garnish with the fresh chopped parsley.
