Ingredients
  1. 1/2 cup mayonnaise
  2. 1 garlic clove, minced
  3. 2 limes, zest & juice
  4. 2 tablespoons fresh dill, chopped
  5. 2 tablespoons fresh parsley, chopped
  6. 8 slices bacon
  7. 4 salmon fillets
  8. 1 small red onion, sliced
  9. 1 avocado, halved, pitted and sliced thin
  10. 2 Roma tomatoes, sliced thin
  11. 1 head romaine lettuce
  12. 12 slices wheat or white bread, large
Instructions
  1. In a small bowl, combine the mayonnaise, garlic, zest and juice of 1 lime, dill and parsley. Cover and refrigerate until ready to use. In a large pan over medium heat, cook the bacon until crisp, 5 minutes. Transfer to a plate and set aside. Slice each salmon fillet on the diagonal into 7 thin pieces. Season with salt and pepper and brush with olive oil. Sprinkle with the zest and juice of the remaining lime. In a large pan over medium heat, cook the salmon until done, 2 minutes a side. Transfer to a plate and set aside. Season the red onion slices with salt and pepper and cook in the same pan until tender, 5 minutes. Begin to assemble the sandwiches. Lay out 4 slices of toasted bread. Top each with a dollop of the mayonnaise mixture, a lettuce leaf, a few pieces of salmon, some tomato and avocado slices and a piece of bacon broken in half. Top each with another piece of bread and repeat the layering. Spread the remaining 4 bread slices with some of the mayonnaise mixture and place on top of the sandwiches. Secure each sandwich with 4 toothpicks and cut into quarters.
