Ingredients
  1. 2 eggs
  2. 1 tablespoon dark brown sugar
  3. 1 teaspoon molasses
  4. 1/3 cup flour
  5. 1/4 teaspoon cinnamon
  6. 1/4 teaspoon ginger
  7. 1/8 teaspoon nutmeg
  8. 1/8 teaspoon salt
  9. 1/3 cup milk
  10. 2 tablespoons butter
  11. powdered sugar, lemon juice, and maple syrup for serving, optional
Instructions
  1. Preheat the oven to 400 degrees. Place the eggs in a blender and blend until smooth, 1 minute. Add the brown sugar, molasses, flour, cinnamon, ginger, nutmeg, salt, and milk and blend until smooth. Melt the butter in a 9 inch ovenproof skillet over high heat, tilting to coat all the sides. Once melted pour the batter into the skillet and transfer to the oven. Bake for 15-20 minutes or until the pancake is puffed. Remove from the oven, and dust with powdered sugar and a drizzle of lemon juice and/or maple syrup if you wish!
