Ingredients
  1. 1 lb chicken strips, (or three boneless, skinless chicken breasts cut into 1/4 inch strips
  2. 1 tablespoon olive oil
  3. 1/3 cup falafel mix
  4. 3 whole wheat pitas, halved
  5. 6 tablespoons hummus
  6. 1 lemon, zest and juice
  7. 1 tablespoon chipotles in adobe, sauce
  8. 4 cups shredded coleslaw mix
Instructions
  1. Preheat oven to 425 degrees. In a large bowl toss the chicken with the olive oil and coat in falafel mix. Arrange on a pam coated baking sheet and cook until golden, 15-20 minutes. While the chicken is baking, mix the hummus, lemon zest and juice, chipotle sauce, and 3 tablespoons water in a small bowl. Remove 2 tablespoons of sauce and reserve. Add the coleslaw mix to the remaining hummus sauce and toss, adding salt to taste. Next start heating the pitas in a small skillet until warmed and slightly browned. Once the chicken is ready, divide among the pitas, stuff with slaw, and drizzle with remaining hummus sauce.
