Ingredients
  1. 6 eggs
  2. 2 tablespoons heavy cream
  3. 1/2 teaspoon salt
  4. 1/4 teaspoon pepper
  5. 1 tablespoon olive oil
  6. 1 tablespoon butter
  7. 1 cup asparagus, ends trimmed, cut into 1/2 inch pieces
  8. 1 cup mushrooms, chopped
  9. 1 tomato, chopped
  10. 1/2 cup mozzarella, grated
  11. 1/2 cup fontina, grated
Instructions
  1. In a medium bowl whisk the eggs, cream, salt, and pepper together. Heat the butter and oil together in a large oven-proof skillet, add asparagus and mushrooms until tender, 5 minutes. Add tomato and cook for 2 more minutes. Pour egg mixture into skillet, and top with cheese. Cook until eggs are set but top is still a bit runny, 10 minutes. Place skillet under a broiler until top is golden brown, 3 minutes. Let frittata cool for 5 minutes. Using a rubber spatula loosen from pan and slide onto plate. Cut into wedges and serve immediately.
