Ingredients
  1. 1 egg
  2. 1 cup Biscoff Cookie Butter (smooth or crunch)
  3. 3/4 cup light brown sugar
  4. 1 1/2 tablespoons vanilla extract
  5. 3/4 cup plus 2 tablespoons flour
  6. 2 teaspoons cornstarch
  7. 1 teaspoon baking soda
  8. 1 cup milk chocolate chips (white chocolate also works great)
Instructions
  1. Preheat the oven to 350 degrees and line two baking sheets with parchment paper (or spray with Pam). In a large bowl, beat together the egg, cookie butter, brown sugar and vanilla until fluffy, 4 minutes. In a medium bowl, combine the flour, cornstarch, cinnamon, baking soda and a pinch of salt. Add the dry ingredients to the wet, 1/2 at a time, mixing to combine. Refrigerate for an hour (or stick in freezer for 20 minutes if you are lazy like me). Place 2 inch mounds of dough at least 2 inches apart on the baking sheets and bake for 8 minutes. These firm as they cool, so don't be surprised in they appear a bit doughy when you remove from the oven. Let cookies cool, 15 minutes.
