Muffins
  1. 1 3/4 cup flour
  2. 1 cup sugar
  3. 1 stick butter
  4. 2 eggs
  5. 1 cup sour cream
  6. 1 1/2 teaspoons baking powder
  7. 3/4 teaspoons baking soda
  8. 1/4 teaspoon salt
  9. 1/4 teaspoon cinnamon
  10. 1 teaspoon vanilla
  11. 4 tablespoons Biscoff Spread
Topping
  1. 1/2 cup flour
  2. 1/4 cup brown sugar
  3. 3 tablespoons butter, cold
  4. 2 tablespoons Biscoff Spread
  5. 1/4 teaspoon salt
  6. 1 teaspoon cinnamon
Instructions
  1. Preheat oven to 350 degrees. Line 2 standard size muffin tins with muffin liners. To prepare the topping, combine all ingredients in a small bowl. Using a fork, add the Biscoff and butter, mashing until course crumbs form. Set aside. To prepare the muffins begin by beating the butter, sugar, and sour cream together until smooth. Add in vanilla, cinnamon, eggs, and biscoff and mix until combined. In a separate bowl, mix the flour, baking powder, baking soda, and salt together. Add the dry ingredients to the wet and fill each liner about 2/3 way full. Generously sprinkle each with the crumb topping. Bake for 20-25 minutes or until the tops begin to brown.
