Ingredients
  1. 2 tablespoons olive oil
  2. 1 red onion, diced
  3. 1 jalapeño, seeded and diced
  4. 2 garlic cloves, minced
  5. 1 1/2 tablespoons smoked paprika
  6. 1 1/2 tablespoons chili powder
  7. 1 tablespoon cumin
  8. 1 teaspoon pepper
  9. 1/2 teaspoon salt
  10. pinch of crushed red pepper flakes
  11. 2 boneless, skinless chicken breasts, cooked and shredded
  12. 1 12 oz. jar roasted red peppers, drained and chopped
  13. 1 1/2 cups cannellini beans, rinsed and drained
  14. 1 1/2 cups canned dark red kidney beans, rinsed and drained
  15. 3 cups chicken stock
  16. 1 28 oz. can diced tomatoes
  17. 1/2 cup BBQ sauce
  18. cheddar cheese and cilantro for garnish, optional
Instructions
  1. Heat a large pot over medium heat and add the olive oil. Add the onion, jalapeño, and garlic and cook, 5 minutes. Add the paprika, chili powder, cumin, black pepper, salt and red pepper flakes and cook, 5 minutes. Add the chicken, red peppers, beans, stock, tomatoes and BBQ and stir to combine. Cover, reduce heat to medium-low and cook for 20 minutes. Taste and season with salt and pepper. Cover and cook, 10 more minutes. Top each serving with cheddar cheese and fresh chopped cilantro if you wish.
