Ingredients
  1. 1 13 oz. jar apricot jam
  2. 8 dried apricots, chopped
  3. 1 3/4 cup flour
  4. 1 cup light brown sugar, packed
  5. 1 teaspoon cinnamon
  6. 3/4 teaspoon salt
  7. 3/4 teaspoon baking soda
  8. 1 3/4 cups oats
  9. 1/2 cup walnuts, chopped
  10. 2 sticks butter, melted
  11. 1 egg, beaten
  12. 1 teaspoon vanilla extract
Instructions
  1. Preheat the oven to 350 degrees and spray a 9X13 baking dish with pam. In a small bowl, mix together the jam and apricots, set aside. In a large bowl, combine the flour, sugar, cinnamon, salt, and baking soda. Stir in the oats and walnuts. Add in the melted butter, egg, and vanilla and mix until a dough forms. Using your fingers, press half of the crust mixture into the bottom of the pan. Using a spatula, spread the filling over the crust, leaving a 1/2 inch border around the edges. Cover the filling with the remaining crust and press to flatten. Bake until lightly golden, 30-35 minutes. Cool for at least an hour before cutting into bars. Store in an air-tight container for up to a week.
