Ingredients
  1. 2 medium Granny Smith apples, peeled, cored, and cut into 1/4 inch cubes
  2. 2 cups flour
  3. 1/3 cup sugar
  4. 1 tablespoon baking powder
  5. 1 teaspoon salt
  6. 1 teaspoon cinnamon
  7. 1/4 teaspoon nutmeg
  8. 3/4 cup apple cider
  9. 2 eggs, beaten
  10. 2 tablespoons butter, melted
  11. 2 cups vegetable oil
  12. 2 cups confectioners sugar
  13. 1/4 cup apple cider
Instructions
  1. In a large bowl, combine flour, sugar, baking powder, salt, cinnamon, and nutmeg. Add cubed apples to flour mixture. In a separate medium bowl, whisk together cider, eggs, and melted butter. Add cider mixture to the flour mixture. In a large shallow pan, heat oil over medium high heat to 350 degrees. Using a 1/3 cup measure, transfer heaping portions of batter to oil, 3 at a time. Press batter lightly with the back of a spoon to flatten, as fritters will rise when cooking. Fry until golden brown, 2-3 minutes a side. Transfer to a plate lined with paper towel. Bring oil back up to temperature before adding another batch of batter. Let fritters cool while you begin making the glaze. In a small bowl, combine the confectioners sugar with cider until smooth. Top each fritter with a tablespoon or so of glaze and let set 10 minutes before serving.
Notes
  1. Fritters are best served right after making! At least for me, the longer they sit, the less crispy they get.
