Ingredients
  1. 1 large zucchini, grated
  2. 1 egg
  3. 1/2 cup parmesan cheese, grated
  4. 1 cup panko bread crumbs
  5. 1 clove garlic
  6. 1/4 teaspoon paprika
  7. 1/8 teaspoon nutmeg
  8. 2 tablespoons olive oil
Instructions
  1. Using a paper towel, squeeze the excess water from the zucchini. Combine all ingredients but the olive oil in a large bowl. Grabbing about 2 tablespoons of the mixture at a time, form into patties (should make about 8). Heat the oil in a large skillet over medium heat. Add patties and cook until browned, 5 minutes a side.
